🐟 Mediterranean Crispy Bang Bang Salmon Bites

🧄 Ingredients

Salmon Bites

  • 1½ lb (700 g) fresh salmon, skin removed, cubed

  • 2 tbsp extra virgin olive oil

  • ½ cup panko breadcrumbs (whole-wheat if possible)

  • 2 tbsp grated Parmesan (optional)

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt & black pepper to taste

Light Mediterranean Bang Bang Sauce

  • ½ cup plain Greek yogurt

  • 2 tbsp olive oil mayonnaise (or extra yogurt)

  • 1½ tbsp sweet chili sauce

  • 1 tbsp honey or date syrup

  • 1 tbsp fresh lemon juice

  • ½–1 tsp chili flakes or sriracha (to taste)

Garnish (Optional)

  • Fresh parsley or cilantro

  • Sesame seeds

  • Lemon wedges


🔪 Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
    (Air fryer option below.)

  2. Season the salmon
    In a bowl, toss salmon cubes with olive oil, paprika, garlic powder, onion powder, salt, and pepper.

  3. Coat
    Mix panko and Parmesan. Gently press salmon into the mixture until evenly coated.

  4. Bake
    Arrange salmon bites in a single layer.
    Bake 12–15 minutes, flipping once, until crispy and cooked through.
    Optional: broil 1–2 minutes for extra crunch.

  5. Make the sauce
    Whisk yogurt, mayo, sweet chili sauce, honey, lemon juice, and chili flakes until smooth.

  6. Serve
    Drizzle sauce over salmon or serve on the side. Garnish with herbs and sesame seeds.
