🥔 Simple Mediterranean Sheet-Pan Scored Potatoes
✅ Ingredients

4–6 medium potatoes (Yukon gold or red work best)

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano or thyme

½ teaspoon paprika

Salt & black pepper, to taste

Optional: fresh rosemary or parsley

Optional topping: lemon zest or feta cheese
👩🍳 Instructions

Preheat Oven
Preheat to 220°C (425°F). Line a sheet pan with parchment paper. -
Prepare Potatoes
Wash potatoes well.
Carefully score each potato with shallow cuts (don’t cut all the way through). -
Season
In a small bowl, mix olive oil, garlic, oregano, paprika, salt, and pepper.
Brush generously over and between the cuts. -
Bake
Place potatoes on the sheet pan.
Bake 35–45 minutes, brushing once halfway through, until crispy and golden. -
Finish & Serve
Sprinkle with fresh herbs, lemon zest, or feta if using.
