🛒 Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)

  • 2 large eggs

  • 3 tbsp oatmeal (blended into oat flour)
    (or use almond flour for low-carb)

  • ½ tsp baking powder

  • Pinch of sea salt

  • ½ tsp vanilla extract (optional, for sweet version)

  • ½ tsp cinnamon (optional)

  • Olive oil or butter for cooking


👩‍🍳 Instructions

  1. Blend batter
    Add cottage cheese, eggs, oats, baking powder, salt, and vanilla to a blender.
    Blend until smooth and thick.

  2. Heat pan
    Warm a non-stick pan over medium heat. Lightly grease with olive oil.

  3. Cook pancakes
    Pour small pancakes (2–3 tbsp batter each).
