Mediterranean Veggie & Cheese Fritters (Golden Pan-Fried Bites) 🌿🧀

Ingredients

1 medium zucchini, grated (squeeze out excess moisture)

1 medium carrot, grated

½ cup yellow cheese, grated (kashkaval, mozzarella, or mild cheddar)

2 eggs

2–3 green onions, finely chopped

2 tbsp fresh parsley or dill, chopped

3–4 tbsp oat flour or chickpea flour (or regular flour)

½ tsp salt
-
½ tsp black pepper
-
½ tsp paprika

Optional: ¼ tsp garlic powder or oregano

Olive oil for frying
Instructions

Prep the veg: Grate the zucchini and squeeze very well to remove moisture. Place in a bowl with carrot, green onions, herbs, and cheese.

Mix: Add eggs, salt, pepper, paprika, and optional seasonings. Stir well.

Bind: Mix in flour until you get a thick, scoopable batter (not runny).

Shape: Form small logs or patties with your hands.

Cook: Heat a thin layer of olive oil in a pan over medium heat. Fry 3–4 minutes per side until golden and cooked through.

Drain: Transfer to paper towels. Serve warm.
