🍗 Melt-In-Your-Mouth Mediterranean Chicken Breast

🛒 Ingredients

  • 4 boneless, skinless chicken breasts

  • ½ cup Greek yogurt (or mayonnaise)

  • ¼ cup grated Parmesan cheese

  • 2 tbsp extra-virgin olive oil

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • ½ tsp paprika

  • ½ tsp black pepper

  • ¾ tsp salt (adjust to taste)

  • Zest of 1 lemon

  • 1 tbsp fresh lemon juice

  • 1 tbsp chopped fresh parsley (optional, for garnish)


🔪 Instructions

  1. Preheat oven to 190°C / 375°F. Lightly grease a baking dish with olive oil.

  2. Mix topping: In a bowl, combine Greek yogurt, Parmesan, olive oil, garlic, oregano, basil, paprika, salt, pepper, lemon zest, and lemon juice.

  3. Prepare chicken: Pat chicken breasts dry and arrange in the baking dish.

  4. Coat generously: Spread the creamy mixture evenly over each chicken breast.

  5. Bake uncovered for 35–40 minutes, until chicken is cooked through and the topping is lightly golden.

  6. Rest & garnish: Let rest 5 minutes. Sprinkle with parsley before serving.
