1️⃣ Roast the Cauliflower
Preheat oven to 200°C / 400°F.
Toss cauliflower with olive oil, honey, paprika, cumin, salt, and pepper.
Spread on a baking tray and roast 25–30 minutes, turning once, until golden and caramelized.
2️⃣ Make the Crunchy Chickpeas
On a second tray, toss chickpeas with olive oil, garlic powder, paprika, and salt.
Roast alongside cauliflower for 20–25 minutes, shaking once, until crispy.
3️⃣ Grill the Halloumi
Heat a grill pan or skillet over medium-high heat.
Lightly brush halloumi with olive oil and grill 2–3 minutes per side until golden.
4️⃣ Assemble
Arrange roasted cauliflower on a platter.
Top with grilled halloumi and crunchy chickpeas.
