1️⃣ Season & Sear the Salmon
Pat salmon dry and season with salt, pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat. Sear salmon 3–4 minutes per side until golden and just cooked through. Remove and set aside.
2️⃣ Sauté Mushrooms & Garlic
In the same skillet, melt butter. Add mushrooms and cook 4–5 minutes until browned. Stir in garlic and thyme; cook 30 seconds until fragrant.
3️⃣ Make the Creamy Sauce
Pour in broth and cream. Simmer gently for 3–4 minutes until slightly thickened. Stir in Parmesan (if using).
4️⃣ Add Spinach
Add spinach and cook until wilted, about 1–2 minutes.
5️⃣ Return Salmon to Pan
Nestle salmon back into the sauce. Spoon sauce over the fillets and simmer 2 minutes. Finish with lemon juice.
