These Grilled Mediterranean Veggie Quesadillas are a delicious fusion of Mediterranean vegetables and a classic quesadilla format. Loaded with grilled veggies, olive oil, herbs, and melty cheese, they’re perfect as a quick lunch, light dinner, or shareable appetizer.

  • Salt & black pepper, to taste

Quesadillas

  • 4 large whole-wheat tortillas

  • 1½ cups shredded mozzarella or Mediterranean blend cheese

  • ½ cup crumbled feta cheese

  • ¼ cup sun-dried tomatoes, chopped (optional)

  • Fresh basil or parsley, chopped

Optional Sauces

  • Tzatziki or garlic yogurt sauce

  • Hummus

  • Olive tapenade


👩‍🍳 Instructions

1️⃣ Grill the Vegetables

Toss vegetables with olive oil, oregano, thyme, salt, and pepper.
Grill on a grill pan or outdoor grill over medium-high heat for 3–4 minutes per side until tender and lightly charred. Chop coarsely.

2️⃣ Assemble the Quesadillas

Lay tortillas flat. Sprinkle mozzarella evenly over half of each tortilla.
Top with grilled vegetables, feta, sun-dried tomatoes, and fresh herbs.
Fold tortillas in half.

3️⃣ Grill Until Crispy

Heat a clean skillet or grill pan over medium heat.
Cook quesadillas 2–3 minutes per side until golden and cheese is melted.
