🥐 Spinach & Feta Cheese Puff Pastry Rolls

Crispy • Savory • Mediterranean-Inspired

Flaky, golden puff pastry wrapped around a flavorful filling of sautéed spinach, creamy feta, olive oil, and aromatic herbs—these Spinach & Feta Puff Pastry Rolls are inspired by Greek spanakopita, but made extra easy. Perfect as an appetizer, tea-time snack, brunch side, or light dinner with a fresh salad.

🛒 Ingredients (Serves 6–8)

  • 2 sheets puff pastry, thawed

  • 2 cups fresh spinach, finely chopped

  • ¾ cup feta cheese, crumbled

  • 1 small onion, finely diced

  • 2 tbsp olive oil

  • 1 garlic clove, minced

  • ½ tsp dried oregano

  • ¼ tsp black pepper

  • Salt to taste (go light—feta is salty)

  • 1 egg, beaten (for egg wash)

  • 1 tbsp sesame or black seeds (optional)

👩‍🍳 Instructions

  1. Prepare the filling
Heat olive oil in a pan over medium heat. Sauté the onion until soft, then add garlic and cook for 30 seconds. Add spinach and cook just until wilted. Remove from heat and let cool slightly.

  2. Mix
Stir in feta cheese, oregano, black pepper, and a pinch of salt. Mix well.

  3. Assemble
Roll out puff pastry sheets and cut each into long rectangles. Spoon the spinach-feta mixture along one edge.

  4. Roll & seal
Roll tightly into logs, sealing the edge with a little water or egg wash.

  5. Finish
Place seam-side down on a baking tray lined with parchment. Brush with beaten egg and sprinkle seeds if using.

  6. Bake
Bake at 200°C (400°F) for 18–22 minutes, or until puffed and golden brown.

  7. Serve
Let cool slightly, slice, and enjoy warm.
