🍋 Lemon Yogurt Cake (No White Flour)

This cake is inspired by traditional Mediterranean yogurt cakes, using whole grains and yogurt instead of refined white flour. It’s lightly sweet, beautifully lemony, and perfect with tea or coffee—simple ingredients, big flavor, and no heaviness.


🛒 Ingredients (8–10 slices)

  • 1½ cups oat flour (or finely ground oats)

  • ¾ cup plain Greek yogurt

  • ½ cup honey or maple syrup

  • ⅓ cup olive oil (or mild vegetable oil)

  • 2 large eggs

  • Zest of 2 lemons

  • ¼ cup fresh lemon juice

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp vanilla extract

  • Pinch of salt

  1. Preheat & prepare
    Preheat oven to 175°C (350°F). Grease and line a 20 cm (8-inch) round pan.

  2. Wet ingredients
    In a bowl, whisk yogurt, honey, olive oil, eggs, lemon zest, lemon juice, and vanilla until smooth.

  3. Dry ingredients
    In another bowl, mix oat flour, baking powder, baking soda, and salt.

  4. Combine
    Add dry ingredients to wet and gently mix until just combined. Do not overmix.

  5. Bake
    Pour into the pan and bake for 35–40 minutes, until a toothpick comes out clean.

  6. Cool & serve
    Cool for 15 minutes before slicing. Optional: drizzle with honey or dust with powdered coconut sugar.

  • 2 tbsp Greek yogurt

  • 1–2 tbsp honey

  • 1 tsp lemon juice

Mix and drizzle over cooled cake.
