  • 1½ lbs (700 g) carrots, peeled or scrubbed

  • 2½ tbsp extra-virgin olive oil

  • ½ tsp ground cumin

  • ½ tsp smoked paprika

  • Salt & black pepper, to taste

  • ⅓ cup soft goat cheese, crumbled

  • ¼ cup pistachios, roughly chopped

  • 1 tbsp fresh parsley or thyme, chopped

  • Optional: pinch of chili flakes or lemon zest


🔪 Instructions

1️⃣ Roast the Carrots

Preheat oven to 200°C / 400°F.
Toss carrots with olive oil, honey, cumin, smoked paprika, salt, and pepper.

Spread in a single layer on a baking sheet.
Roast for 30–35 minutes, turning halfway, until tender and beautifully caramelized.

2️⃣ Finish & Assemble

Transfer hot carrots to a serving platter.
Crumble goat cheese over the top, sprinkle with pistachios, and add fresh herbs.

3️⃣ Final Touch
