🍎🌾 Apple Oatmeal Breakfast Bake (No Sugar, No Flour)

✅ Ingredients

  • 1 cup oatmeal (rolled oats)

  • 2 apples, grated or finely chopped

  • 2 eggs

  • 150 g plain yogurt (Greek or regular)

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon (optional, Mediterranean touch)

  • Pinch of salt

  • Optional: vanilla or lemon zest


👩‍🍳 Instructions

  1. Prep Oats
    If you want a softer texture, blend oats into coarse flour (optional).
    You can also use whole oats.

  2. Mix Wet Ingredients
    In a bowl, whisk eggs with yogurt until smooth.

  3. Add Apples
    Stir in grated apples, cinnamon, salt, and vanilla if using.

  4. Combine
    Add oats and baking powder. Mix well.
    Let rest 5 minutes so oats absorb moisture.

  5. Bake
    Pour into a lined or lightly oiled baking dish.
    Bake at 180°C (350°F) for 35–40 minutes until set and golden.

  6. Cool & Serve
    Let cool slightly before slicing.
