🍎 Apple Salad with Honeycrisp Apples, Celery, Grapes, Pecans & Dried Cranberries

Ingredients (4 servings)

Salad

  • 2 Honeycrisp apples, diced or thinly sliced

  • 1 cup red or green grapes, halved

  • 2–3 celery stalks, thinly sliced

  • ½ cup pecans, toasted and roughly chopped

  • ¼ cup dried cranberries (unsweetened if possible)

  • 2–3 tbsp fresh parsley or mint, chopped

  • Optional: ¼ cup feta cheese (Mediterranean twist)


Mediterranean Honey-Lemon Dressing

  • 2 tbsp extra-virgin olive oil

  • 1½ tbsp honey

  • 1 tbsp fresh lemon juice (or apple cider vinegar)

  • 1 tsp Dijon mustard

  • ¼ tsp salt

  • ⅛ tsp black pepper

  • Optional: ½ tsp poppy seeds


🔥 Instructions

1. Prep the fruit & veggies

  • Slice the apples (toss with a little lemon juice to prevent browning).

  • Halve the grapes.

  • Thinly slice celery.

  • Chop parsley/mint.

  • Toast pecans in a dry pan for 2–3 minutes (optional but enhances taste).


2. Make the dressing

In a small bowl or jar, whisk together:

  • Olive oil

  • Honey

  • Lemon juice

  • Dijon mustard

  • Salt & pepper

Shake until smooth and creamy.


3. Assemble the salad

In a large bowl, combine:

  • Apples

  • Grapes

  • Celery

  • Pecans

  • Cranberries

  • Parsley/mint

Pour the dressing on top and toss gently.


4. Serve

Serve immediately OR refrigerate for 15 minutes to let flavors blend.
