🧀 Bacon & Cheese Crustless Quiche (Mediterranean Twist)

🛒 Ingredients

  • 6 large eggs

  • 1 cup whole milk (or half-and-half for extra creaminess)

  • 6 slices bacon, chopped

  • 1 cup shredded cheese (Gruyère, mozzarella, feta, or sharp cheddar)

  • ½ small red onion, finely chopped

  • 1 cup fresh spinach, chopped

  • 1 garlic clove, minced

  • 1 tbsp olive oil

  • ½ tsp dried oregano

  • ½ tsp dried thyme

  • Salt & black pepper, to taste

  • Optional: cherry tomatoes, halved or sliced Kalamata olives


👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish with olive oil.

  2. In a skillet over medium heat, cook bacon until crispy. Remove and drain on paper towels.

  3. In the same pan, add olive oil, then sauté onion and garlic until soft.

  4. Add spinach and cook just until wilted. Remove from heat.

  5. In a bowl, whisk eggs, milk, oregano, thyme, salt, and pepper.

  6. Spread bacon, sautéed vegetables, and cheese evenly in the baking dish.

  7. Pour egg mixture over the fillings. Add optional tomatoes or olives if using.

  8. Bake 30–35 minutes, until the center is set and the top is lightly golden.

  9. Rest for 5–10 minutes, slice, and serve.

  • Serve with a cucumber-tomato salad and lemon-olive oil dressing

  • Add feta + sun-dried tomatoes for extra Mediterranean flavor
