BAKED GARLIC PARMESAN POTATO WEDGES

Mediterranean Baked Garlic Parmesan Potato Wedges

Golden, crispy, cheesy, garlicky wedges with oregano, olive oil, and lemon—your new favorite side dish!


🟡 INGREDIENTS

For the Potato Wedges

  • 4 medium potatoes (Russet or any firm potato)

  • 3 tbsp olive oil

  • 4 cloves garlic, minced

  • ½ cup grated Parmesan cheese

  • 1 tsp dried oregano

  • 1 tsp paprika

  • ½ tsp dried thyme or rosemary

  • ½ tsp black pepper

  • 1 tsp salt

  • Juice of ½ lemon

  • 2 tbsp chopped parsley (for garnish)


🟢 OPTIONAL DIP

  • ½ cup Greek yogurt

  • 1 tbsp lemon juice

  • 1 garlic clove, grated

  • Pinch salt & pepper

  • A drizzle of olive oil

Mix together for a Mediterranean garlic dip.


🟣 DIRECTIONS

1. Prep the Potatoes

  • Preheat oven to 220°C (425°F).

  • Wash potatoes well; leave the skin on.

  • Cut each potato into 8 long wedges.


2. Season the Wedges

In a large bowl combine:

  • Olive oil

  • Garlic

  • Parmesan

  • Oregano

  • Paprika

  • Thyme/rosemary

  • Salt

  • Pepper

  • Lemon juice

Add the potato wedges and toss well until fully coated.


3. Arrange on the Baking Tray

  • Line a tray with parchment paper.

  • Spread the wedges out skin-side down so the cut sides get crispy.


4. Bake

  • Bake 22–28 minutes, flipping halfway.

  • Bake until edges are golden and crisp.


5. Finish

  • Sprinkle with extra Parmesan and chopped parsley.

  • Squeeze a tiny bit more lemon on top (optional but amazing).
