BLACKEYE PEAS, SAUSAGE AND COLLARD GREENS
Hi. When I cook for me and my 4 sons who are now grown, I cook with taste for my family . I have a passion for cooking so no exact measurements. I apologize for that . If ya know ya know as they say .
1. A.1lb blackeye peas, dry, 4 bunches of Collard Greens , (washed , cut ends and chopped roughly ).( not little pieces ) B.soak peas for a few hours . I don’t soak overnight as they cook overnight on low in my 1980ish crock pot .
2. 2lb Pork or sausage links.( cooked in skillet then added)
3. 2 small cartons chicken stock
4. Teaspoon n half of minced garlic .
5. Large can Rotel tomatoes
6. 3 Tablespoons Apple Cider Vinegar
7.Tablespoon tomato paste
8. Sugar to taste to brake up bitter of Collards . Tablespoon or less for me
9. Add water . Approx cup and half . If you need more , taste after cooking a bit .
I cook on low overnight or at least 10 hrs and taste and adjust water or seasoning. My seasoning are usually correct to my taste as I make this twice a year for many years now .
You can also use a dash of hot sauce if ya want a lil
Kick .. I also add a dash of salt and pepper towards the end of cooking to perfect my taste ..
It’s an easy throw in crockpot
Recipe and you can add your own twists of peas, seasonings and meats .
