Blueberry Cottage Cheese Breakfast Bake

Mediterranean-Friendly | High Protein | No Flour

Ingredients (Serves 4–6)

  • 1 cup cottage cheese (preferably low-fat or full-fat)

  • 2 large eggs

  • 1 cup rolled oats (or oat flour)

  • 1 cup fresh or frozen blueberries

  • 2 tbsp honey or maple syrup (optional, adjust to taste)

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • 1 tsp baking powder

  • Pinch of salt

  • Zest of 1 lemon (optional but very Mediterranean!)

  • 2–3 tbsp olive oil (or melted butter)

  • 2–3 tbsp Greek yogurt (optional for extra creaminess)


Instructions

1. Blend the base

In a blender, combine:

  • cottage cheese

  • eggs

  • oats

  • honey/maple

  • olive oil

  • vanilla

  • cinnamon

  • salt

  • baking powder

  • lemon zest

Blend until smooth and creamy.

2. Add blueberries

Fold the blueberries gently into the blended mixture (do not blend them).

3. Pour & bake

  • Grease a small baking dish (8×8 or similar).

  • Pour the mixture in.

  • Top with extra blueberries if you like.

Bake at 180°C (350°F) for 30–35 minutes, or until the center is set and edges turn golden.

4. Cool & serve

Let it cool slightly so it firms up.
Serve warm with:

  • a spoon of Greek yogurt

  • a drizzle of honey

  • extra blueberries

  • or a sprinkle of crushed nuts


Mediterranean Tips

  • Replace honey with dates or date syrup for more Mediterranean sweetness.

  • Add chia seeds or ground flaxseed for extra fiber.

  • Use olive oil instead of butter for authentic Mediterranean balance.
