Blueberry Cottage Cheese Breakfast Bake
Mediterranean-Friendly | High Protein | No Flour
Ingredients (Serves 4–6)

1 cup cottage cheese (preferably low-fat or full-fat)

2 large eggs
-
1 cup rolled oats (or oat flour)
-
1 cup fresh or frozen blueberries
-
2 tbsp honey or maple syrup (optional, adjust to taste)
-
1 tsp vanilla extract
-
½ tsp cinnamon
-
1 tsp baking powder
-
Pinch of salt
-
Zest of 1 lemon (optional but very Mediterranean!)

2–3 tbsp olive oil (or melted butter)
-
2–3 tbsp Greek yogurt (optional for extra creaminess)
Instructions
1. Blend the base
In a blender, combine:

cottage cheese
-
eggs
-
oats
-
honey/maple
-
olive oil
-
vanilla
-
cinnamon
-
salt
-
baking powder
-
lemon zest
Blend until smooth and creamy.
2. Add blueberries
Fold the blueberries gently into the blended mixture (do not blend them).
3. Pour & bake

Grease a small baking dish (8×8 or similar).

Pour the mixture in.

Top with extra blueberries if you like.
Bake at 180°C (350°F) for 30–35 minutes, or until the center is set and edges turn golden.
4. Cool & serve
Let it cool slightly so it firms up.
Serve warm with:

a spoon of Greek yogurt
-
a drizzle of honey
-
extra blueberries
-
or a sprinkle of crushed nuts
Mediterranean Tips

Replace honey with dates or date syrup for more Mediterranean sweetness.

Add chia seeds or ground flaxseed for extra fiber.
