🫐 Mediterranean Blueberry Cottage Cheese Breakfast Bake

🧄 Ingredients

  • 1½ cups cottage cheese (full-fat or low-fat)

  • 3 large eggs

  • ½ cup rolled oats (or oat flour)

  • ⅓ cup honey or date syrup

  • 1 tsp vanilla extract

  • Zest of 1 lemon

  • 1 tsp baking powder

  • ½ tsp ground cinnamon

  • Pinch of salt

  • 1½ cups fresh or frozen blueberries

  • 2 tbsp chopped almonds or walnuts (optional)

  • Extra virgin olive oil or butter (for greasing)


🔪 Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.

  2. Blend the base
    In a blender or food processor, blend cottage cheese, eggs, oats, honey, vanilla, lemon zest, baking powder, cinnamon, and salt until smooth.

  3. Add blueberries
    Gently fold in blueberries and nuts (if using).

  4. Bake
    Pour mixture into prepared dish.
    Bake 35–40 minutes, until set in the center and lightly golden.

  5. Cool & serve
    Rest 10 minutes before slicing.
