🫐 Mediterranean Blueberry Cottage Cheese Breakfast Bake

1½ cups cottage cheese (full-fat or low-fat)

3 large eggs

½ cup rolled oats (or oat flour)

⅓ cup honey or date syrup

1 tsp vanilla extract

Zest of 1 lemon

1 tsp baking powder

½ tsp ground cinnamon

Pinch of salt

1½ cups fresh or frozen blueberries

2 tbsp chopped almonds or walnuts (optional)

Extra virgin olive oil or butter (for greasing)
🔪 Instructions

Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.

Blend the base
In a blender or food processor, blend cottage cheese, eggs, oats, honey, vanilla, lemon zest, baking powder, cinnamon, and salt until smooth. -
Add blueberries
Gently fold in blueberries and nuts (if using). -
Bake
Pour mixture into prepared dish.
Bake 35–40 minutes, until set in the center and lightly golden. -
Cool & serve
Rest 10 minutes before slicing.
