🛒 Ingredients
1 cup full-fat Greek yogurt (very thick, strained)
½ cup fresh blueberries, finely chopped
2 tbsp vanilla protein powder (low-carb / sugar-free)
1 tbsp chia seeds
1 tbsp almond flour
1–2 tbsp powdered erythritol or monk fruit (to taste)
½ tsp vanilla extract
Pinch of lemon zest (Mediterranean touch 🍋)
Optional Coating
¼ cup sugar-free white or dark chocolate, melted
orFinely chopped pistachios or almonds
👩🍳 Instructions
In a bowl, mix Greek yogurt, protein powder, sweetener, vanilla, and lemon zest until smooth.
Fold in blueberries, chia seeds, and almond flour.
Scoop tablespoon-sized portions onto a parchment-lined tray.
Freeze for 1–2 hours until firm.
Optional: dip in melted chocolate or roll in nuts, then return to freezer for 10 minutes.
