🛒 Ingredients
2 cups pumpkin, peeled & cubed
2 medium sweet potatoes, cubed
3 tbsp extra-virgin olive oil
1 tbsp honey or maple syrup
1 tsp ground cumin
½ tsp smoked paprika
½ tsp sea salt
¼ tsp black pepper
Topping
⅓ cup feta cheese, crumbled
¼ cup walnuts, chopped
1 tbsp fresh parsley or thyme
Optional: drizzle of balsamic glaze or lemon zest
👩🍳 Instructions
Preheat oven to 200°C / 400°F. Line a baking tray.
Season vegetables
Toss pumpkin and sweet potato with olive oil, honey, cumin, paprika, salt, and pepper.Roast
Spread in a single layer. Roast 30–35 minutes, flipping once, until golden and caramelized.Add crunch
Sprinkle walnuts over the tray and roast 5 more minutes.Finish
Remove from oven. Top with feta and fresh herbs.Serve
Add balsamic glaze or lemon zest if desired.
