2 tbsp beef tallow or butter

1 cup heavy cream (full-fat)

½ cup sour cream

1 tsp salt (to taste)

½ tsp white or black pepper (optional)

½ cup beef bone broth (optional, for extra sauce)

1. Sear the beef

Heat tallow or butter in a skillet over medium-high heat.

Add beef in batches.

Sear 30–60 seconds per side until browned.

2. Make the sauce

Lower heat to medium.

Add bone broth (if using) and simmer 2–3 minutes.

Stir in heavy cream.

Simmer gently 5 minutes until slightly thick.
3. Finish with sour cream

Lower heat to low.

Stir in sour cream until smooth.

4. Combine

Return beef to pan.
