  • 1½ lb (680 g) beef sirloin or ribeye, thinly sliced

  • 2 tbsp beef tallow or butter

  • 1 cup heavy cream (full-fat)

  • ½ cup sour cream

  • 1 tsp salt (to taste)

  • ½ tsp white or black pepper (optional)

  • ½ cup beef bone broth (optional, for extra sauce)

🔥 Instructions

1. Sear the beef

  • Heat tallow or butter in a skillet over medium-high heat.

  • Add beef in batches.

  • Sear 30–60 seconds per side until browned.

  • Remove beef and set aside.

2. Make the sauce

  • Lower heat to medium.

  • Add bone broth (if using) and simmer 2–3 minutes.

  • Stir in heavy cream.

  • Simmer gently 5 minutes until slightly thick.

3. Finish with sour cream

  • Lower heat to low.

  • Stir in sour cream until smooth.

  • Season with salt and pepper.

4. Combine

  • Return beef to pan.

  • Gently simmer 2–3 minutes (do not boil).

  • Taste and adjust salt.

5. Serve

  • Serve hot with extra butter on top.
