A rich, creamy, zero-carb dessert made with only animal-based ingredients. This version has three smooth layers that bake together into a dense, luxurious carnivore cheesecake.

🥄 Ingredients

Bottom Layer (Dense Cheesecake Base)

  • 450 g cream cheese (softened)

  • 2 large eggs

  • 2 tbsp sour cream

  • Pinch of salt

Middle Layer (Extra Creamy Layer)

  • 225 g cream cheese

  • 1 egg

  • 3 tbsp heavy cream

Top Layer (Light Custard Layer)

  • 2 eggs

  • 120 ml heavy cream

  • 2 tbsp sour cream

(Optional for non-strict carnivore: a little vanilla extract or keto sweetener)


👨‍🍳 Instructions

1️⃣ Preheat

  • Preheat oven to 160°C (320°F).

  • Grease a springform pan (7–8 inch) with butter.


2️⃣ Make Bottom Layer

  1. Beat cream cheese until smooth.

  2. Add eggs, sour cream, and salt.

  3. Mix until creamy and lump-free.

  4. Pour into pan.

Bake 15 minutes.


3️⃣ Make Middle Layer

  1. Beat cream cheese until smooth.

  2. Add egg and heavy cream.

  3. Mix until silky.

Pour gently over the partially baked base.

Bake 15 minutes again.


4️⃣ Make Top Custard Layer

  1. Whisk eggs, heavy cream, and sour cream together.

  2. Pour slowly over the second layer.

Bake 15–20 minutes until center is slightly jiggly.


5️⃣ Cool Properly

  1. Turn oven off and crack the door open.

  2. Let cheesecake cool inside 30 minutes.

  3. Refrigerate at least 3 hours (overnight best).


🍽 Serve

Slice and enjoy cold.

Optional carnivore toppings:

  • Whipped heavy cream

  • Mascarpone cream

  • Melted butter drizzle


💡 Pro Tip:
For an ultra-smooth texture, bake the cheesecake in a water bath (place pan in a larger pan with hot water).
