🥕 Carrot Walnut Cake

2 large eggs

½ cup olive oil (or half olive oil + half yogurt)

¾ cup raw cane sugar or honey

1 tsp vanilla extract

Zest of 1 orange (Mediterranean touch)

1½ cups finely grated carrots

1 cup all-purpose flour (or half whole-wheat)

1 tsp baking powder

½ tsp baking soda
-
1 tsp ground cinnamon

¼ tsp nutmeg

Pinch sea salt

¾ cup chopped walnuts
Optional Add-Ins

2 tbsp raisins or dried cranberries

2 tbsp Greek yogurt (extra moist)

Preheat Oven
Heat to 180°C / 350°F. Grease or line a cake pan. -
Mix Wet Ingredients
Whisk eggs, olive oil, sugar, vanilla, and orange zest until smooth. -
Add Carrots
Stir in grated carrots (and yogurt if using). -
Combine Dry Ingredients
In another bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt. -
Mix Batter
Fold dry ingredients into wet ingredients just until combined. -
Add Walnuts
Gently fold in chopped walnuts (and raisins if using). -
Bake
Pour batter into pan.
Bake 30–35 minutes, until a toothpick comes out clean. -
Cool & Serve
Cool slightly, slice, and enjoy.
