Ingredients
8 ounces pasta (penne, rotini, or shells work well)
1 pound ground beef
1 packet (1 ounce) taco seasoning mix
1/2 cup water
4 ounces cream cheese, softened
1 cup shredded cheddar cheese
1/2 cup salsa
1/4 cup sour cream
Salt and pepper, to taste
Optional toppings: chopped green onions, diced tomatoes, black olives, or fresh cilantro
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside.
Cook the Ground Beef:
In a large skillet, brown the ground beef over medium-high heat, breaking it apart with a spoon, until no longer pink. Drain any excess fat.
Add Seasoning and Water:
Stir in the taco seasoning mix and water, cooking for about 2-3 minutes until the beef is well coated and the mixture is thickened.
Make the Creamy Sauce:
Lower the heat to medium and add the cream cheese and salsa, stirring until the cream cheese is melted and the sauce is smooth.
Combine Pasta and Cheese:
Add the cooked pasta to the skillet and toss to coat. Stir in the cheddar cheese until melted, then add the sour cream, mixing well. Season with salt and pepper to taste.
Serve:
Garnish with optional toppings like chopped green onions, diced tomatoes, black olives, or fresh cilantro.
