Mediterranean Chicken, Mushroom & Spinach Lasagna

📝 Ingredients

For the Chicken & Veggie Filling

  • 2 tbsp extra-virgin olive oil

  • 450 g chicken breast, diced or shredded

  • 1 medium onion, finely chopped

  • 3–4 cloves garlic, minced

  • 250 g mushrooms, sliced

  • 3 cups fresh spinach, roughly chopped

  • ½ tsp dried oregano

  • ½ tsp dried basil

  • ¼ tsp chili flakes (optional)

  • Salt & pepper


For the Creamy Mediterranean Sauce

  • 2 tbsp olive oil (or butter)

  • 2 tbsp flour

  • 2 cups milk

  • ½ cup chicken broth

  • ½ cup Greek yogurt (makes the sauce extra creamy + Mediterranean)

  • ½ cup Parmesan, grated

  • ½ cup mozzarella, shredded

  • Zest of ½ lemon

  • 1 tbsp lemon juice

  • Salt & pepper

  • Pinch nutmeg (optional but authentic)


For Assembly

  • 9–12 lasagna sheets (no-boil or pre-boiled)

  • 1–1½ cups mozzarella, shredded

  • ¼ cup Parmesan

  • Fresh basil or parsley


🍳 Instructions


1. Prepare the Chicken Filling

  1. Heat olive oil in a skillet.

  2. Add chicken, season with salt, pepper, oregano, basil, chili flakes.

  3. Cook until lightly browned.

  4. Add onions → sauté 2 minutes.

  5. Add mushrooms → cook until soft and lightly caramelized.

  6. Add garlic → stir 30 seconds.

  7. Add spinach → cook until wilted.

  8. Remove from heat and set aside.


2. Make the Creamy Mediterranean Sauce

  1. In a pot, heat olive oil (or butter).

  2. Add flour and whisk 1 minute.

  3. Slowly pour in milk + chicken broth while whisking.

  4. Simmer until slightly thickened.

  5. Add:

    • Greek yogurt

    • Parmesan

    • Mozzarella

    • Lemon juice & zest

    • Salt, pepper, pinch of nutmeg

  6. Stir until creamy and smooth.


3. Combine Filling with Sauce

Mix the chicken–mushroom–spinach mixture with half of the sauce.
Reserve the other half for layering.


4. Assemble the Lasagna

Use a greased baking dish:

  1. Spread 2–3 tablespoons sauce on the bottom.

  2. Add first layer of lasagna sheets.

  3. Spoon a layer of chicken mixture.

  4. Add a layer of sauce.

  5. Sprinkle mozzarella.

  6. Repeat layers (usually 3 layers).

  7. Finish with:

    • Sauce

    • Mozzarella

    • Parmesan


5. Bake

  • Bake at 190°C (375°F) for 30–40 minutes

  • Broil for 2 minutes for a golden, bubbly top

  • Let rest 10 minutes before cutting

  • Roasted vegetables

  • Garlic-herb yogurt dip

  • Crusty Mediterranean bread
