🍝🌿 Chicken, Mushroom, and Spinach Lasagna

Mediterranean Style | Lightened-Up | Oven-Baked

🛒 Ingredients (Serves 6–8)

Lasagna Layers

  • 9–12 lasagna sheets (regular or whole-wheat)

  • 2 tbsp extra-virgin olive oil

  • 2 chicken breasts, cooked & shredded

  • 250 g (9 oz) mushrooms, sliced

  • 3 cloves garlic, minced

  • 2 cups fresh spinach

  • 1 tsp dried oregano

  • ½ tsp dried thyme

  • Salt & black pepper, to taste

Creamy White Sauce

  • 2 tbsp butter or olive oil

  • 2 tbsp flour (or cornstarch for gluten-free)

  • 2½ cups milk (or half-and-half)

  • ½ cup grated Parmesan cheese

  • Pinch of nutmeg (optional)

  • Salt & white pepper, to taste

Cheese Layer

  • 1½ cups ricotta or cottage cheese

  • 1 egg

  • ½ cup shredded mozzarella

  • 2 tbsp fresh parsley or basil, chopped


👩‍🍳 Instructions

  1. Prepare Pasta
    Cook lasagna sheets according to package directions (unless no-boil). Drain and set aside.

  2. Cook Filling
    Heat olive oil in a pan.
    Sauté mushrooms for 5–6 minutes until golden.
    Add garlic, oregano, thyme, salt, and pepper.
    Stir in chicken and spinach; cook until spinach wilts. Set aside.

  3. Make White Sauce
    Melt butter in a saucepan. Whisk in flour and cook 1 minute.
    Slowly whisk in milk until smooth.
    Simmer until thickened. Stir in Parmesan, nutmeg, salt, and pepper.

  4. Cheese Mix
    Combine ricotta, egg, mozzarella, and herbs in a bowl.

  5. Assemble Lasagna
    Preheat oven to 180°C (350°F).
    In a baking dish:

    • Spread white sauce

    • Add lasagna sheets

    • Add chicken-mushroom-spinach mixture

    • Add ricotta mixture
      Repeat layers, finishing with sauce and mozzarella.

  6. Bake
    Cover with foil and bake 30 minutes.
    Uncover and bake 10–15 minutes until golden and bubbly.

  7. Rest & Serve
    Let stand 10 minutes before slicing.

  • Low-carb: Replace pasta with zucchini slices
