🛒 Ingredients

1½ lb (700 g) boneless, skinless chicken breasts or thighs

3 tbsp extra-virgin olive oil

10 oz (280 g) mushrooms, sliced (button or cremini)

3 cups fresh spinach

1 small onion, thinly sliced

4 cloves garlic, minced

1 tsp dried oregano

1 tsp paprika

½ tsp thyme or rosemary

½ tsp ground black pepper

Salt to taste

Juice of ½ lemon

👩🍳 Instructions

Preheat Oven
Preheat to 375°F (190°C). Lightly grease a baking dish with olive oil. -
Season Chicken
Pat chicken dry and season with salt, pepper, paprika, oregano, and thyme. -
Layer Vegetables
Spread onions and mushrooms evenly in the baking dish. Drizzle with 1 tbsp olive oil and sprinkle with garlic. -
Add Chicken
Place chicken on top of vegetables. Drizzle remaining olive oil over chicken. -
Bake
Cover loosely with foil and bake for 25 minutes. -
Add Spinach
Remove foil, scatter spinach over chicken and mushrooms. Return to oven uncovered for 10–15 minutes until chicken is cooked through and spinach is wilted. -
Finish
Drizzle with lemon juice. Add feta or cheese if using and bake 5 more minutes. -
Rest & Serve
Let rest 5 minutes before serving.
