CHICKEN SPINACH AND MUSHROOM LOW CARB OVEN DISH

🇬🇷 Mediterranean Chicken, Spinach & Mushroom Low-Carb Oven Dish

📝 Ingredients

Chicken & Veggies

  • 1.5 lbs (680 g) chicken breasts, cut into strips OR bite-size pieces

  • 2 tbsp olive oil

  • 8 oz (225 g) mushrooms, sliced (cremini or white)

  • 3 cups fresh spinach

  • 1 medium onion, thinly sliced

  • 3 cloves garlic, minced

Mediterranean Seasoning

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp paprika

  • ½ tsp cumin

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

  • ¼ tsp red pepper flakes (optional)

Creamy Low-Carb Sauce

  • ¾ cup heavy cream or unsweetened coconut cream

  • ¼ cup chicken broth

  • 1 tbsp lemon juice

  • ½ tsp Dijon mustard (optional, adds depth)

  • ½ cup grated Parmesan or crumbled feta

  • Zest of ½ lemon

Finish

  • Extra Parmesan or feta for topping

  • Fresh parsley or basil


🍋 Instructions

1. Preheat oven

Preheat to 400°F (205°C).


2. Season the chicken

In a bowl, toss chicken with:

  • Olive oil

  • Oregano, thyme, paprika, cumin, salt, pepper, red pepper flakes

Set aside while you begin the vegetables.


3. Sauté mushrooms & onion

  1. Heat a skillet on medium and add a drizzle of olive oil.

  2. Cook mushrooms and onions 5–6 minutes until softened and lightly browned.

  3. Add garlic and cook 30 seconds more.

  4. Add spinach and cook just until wilted (1–2 minutes).

  5. Remove from heat.


4. Make the creamy sauce

In a small bowl or measuring cup whisk together:

  • Heavy cream

  • Chicken broth

  • Lemon juice

  • Dijon (optional)

  • Lemon zest

Mix in ¼–½ cup Parmesan or feta.


5. Assemble the oven dish

  1. Lightly oil a medium baking dish.

  2. Spread the seasoned chicken pieces evenly.

  3. Top with the sautéed spinach, mushrooms, and onions.

  4. Pour the creamy Mediterranean sauce over everything.

  5. Sprinkle a little extra cheese on top.


6. Bake

Bake uncovered for 25–30 minutes, or until the chicken reaches 165°F and the sauce is bubbling.

For a golden top, broil for 2 minutes at the end.
