🍗🥒 Mediterranean Chicken Zucchini Bake

Ingredients

Chicken & Veggies

  • 500 g chicken breast, cut into small cubes

  • 2 medium zucchinis, sliced or diced

  • 1 medium onion, finely chopped

  • 1 red bell pepper, chopped

  • 3 cloves garlic, minced

  • 2 tbsp extra-virgin olive oil

Mediterranean Seasoning

  • 1 tsp oregano

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • ½ tsp black pepper

  • ½ tsp salt (or to taste)

  • ¼ tsp chili flakes (optional)

  • Juice of ½ lemon

  • 1 tbsp fresh parsley, chopped

Cheese Layer

  • ½ cup shredded mozzarella

  • ¼ cup crumbled feta

  • 2 tbsp grated Parmesan (optional but delicious)

Optional Add-ins

  • Sliced olives

  • Cherry tomatoes

  • Spinach

  • Mushrooms


🧑‍🍳 Instructions

1. Preheat Oven

  • Set oven to 400°F (200°C).


2. Prep the Chicken

  1. Place chicken cubes in a bowl.

  2. Add olive oil, lemon juice, garlic, oregano, paprika, pepper, and salt.

  3. Mix well and let marinate while preparing veggies.


3. Assemble the Bake

  1. In a baking dish, add:

    • Zucchini

    • Bell pepper

    • Onion

  2. Spread the marinated chicken evenly on top.

  3. Toss everything gently so seasoning coats the vegetables too.


4. Add Cheese

Sprinkle over the top:

  • Mozzarella

  • Feta

  • Parmesan


5. Bake

  • Bake 25–30 minutes, until chicken is cooked and cheese is golden.

  • If you want extra browning, broil for 2–3 minutes at the end.


6. Finish

  • Garnish with fresh parsley or basil.

  • Add a squeeze of lemon for extra Mediterranean freshness.
