🥗 Mediterranean Chickpea Salad

🧺 Ingredients
2 cups cooked chickpeas (or 1½ cans, drained & rinsed)
1 cup cherry tomatoes, halved
1 small cucumber, diced
¼ red onion, finely chopped
½ cup bell pepper (red or yellow), diced
⅓ cup Kalamata olives, sliced
¼ cup fresh parsley, chopped
2 tablespoons fresh mint or basil (optional but recommended)
⅓ cup feta cheese, crumbled
🍋 Mediterranean Dressing
¼ cup extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 small garlic clove, minced
½ teaspoon dried oregano
Salt & black pepper, to taste
Optional: pinch of chili flakes or cumin
👩🍳 Instructions
In a large bowl, combine chickpeas, tomatoes, cucumber, red onion, bell pepper, olives, parsley, and mint.
In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
Pour dressing over the salad and toss gently to combine.
Add crumbled feta and lightly mix.
Taste and adjust seasoning if needed.
Chill for 10–15 minutes for best flavor before serving.
