🌿 Chinese Chicken Cabbage Stir-Fry (Mediterranean Style)

📝 Ingredients (Serves 4)

For the Chicken

  • 500g boneless chicken breast or thighs, thinly sliced

  • 1 tbsp olive oil

  • 1 tsp garlic powder (or 2 fresh garlic cloves, minced)

  • ½ tsp black pepper

  • ½ tsp paprika

  • ½ tsp dried oregano

  • Salt to taste

Vegetables

  • 3 cups green cabbage, thinly shredded

  • 1 cup purple cabbage (optional for color)

  • 1 large carrot, julienned

  • 1 small red bell pepper, thinly sliced

  • 1 small onion, thinly sliced

  • 1 cup baby spinach (Mediterranean twist)

  • 2 tbsp olive oil

Mediterranean–Asian Fusion Sauce

  • 2 tbsp low-sodium soy sauce (or tamari)

  • 1 tbsp lemon juice

  • 1 tbsp rice vinegar or apple cider vinegar

  • 1 tsp sesame oil (optional, small amount keeps Mediterranean balance)

  • 1 tbsp honey or date syrup

  • 1 tsp chili flakes or chili paste

  • 1 tsp grated ginger

Optional Garnish

  • Toasted sesame seeds

  • Fresh parsley or cilantro

  • Crushed walnuts or pine nuts for crunch


👩‍🍳 Instructions

1. Marinate the Chicken

  1. In a bowl, combine the sliced chicken with
    olive oil, garlic, black pepper, paprika, oregano, and salt.

  2. Set aside for 10 minutes.


2. Cook the Chicken

  1. Heat 1 tbsp olive oil in a large pan or wok over medium-high heat.

  2. Add the chicken and cook until golden and fully cooked (5–7 minutes).

  3. Remove from the pan and set aside.


3. Sauté the Vegetables

  1. Add another 1 tbsp olive oil to the same pan.

  2. Add onion, bell pepper, carrot — toss for 2 minutes.

  3. Add shredded cabbage and cook until softened but still crisp (3–4 minutes).

  4. Add spinach and let it wilt.


4. Add the Sauce

  1. Whisk together: soy sauce, lemon juice, vinegar, honey, chili, sesame oil, and ginger.

  2. Pour into the pan and mix well.


5. Combine Everything

  1. Return the cooked chicken to the pan.

  2. Stir everything together for 1–2 minutes to coat well.
