Ingredients

  • 3 cups Rice Krispies cereal

  • ½ cup dark chocolate chips (70% cocoa preferred)

  • ¼ cup extra-virgin olive oil or unsalted butter

  • ½ cup thick Greek yogurt

  • 1 tsp vanilla extract

  • ¼ tsp sea salt

  • ½ tsp cinnamon (optional, festive touch)

Optional Coatings

  • Unsweetened cocoa powder

  • Crushed pistachios or almonds

  • Shredded coconut

  • Dark chocolate drizzle


Instructions

  1. Melt chocolate: In a heatproof bowl, melt dark chocolate with olive oil (or butter) until smooth.

  2. Make pudding base: Stir honey, Greek yogurt, vanilla, salt, and cinnamon into the melted chocolate until creamy.

  3. Add cereal: Gently fold in Rice Krispies until evenly coated.

  4. Shape balls: Let mixture cool slightly, then roll into small bite-size balls.

  5. Coat: Roll in cocoa powder, nuts, or coconut—or drizzle with extra melted chocolate.

  6. Chill: Refrigerate for 30–45 minutes until firm.
