🫛 Mediterranean Classic Pea Salad

Ingredients

  • 3 cups sweet peas (fresh or frozen, thawed)

  • ½ cup red onion, finely diced

  • ½ cup cucumber, diced

  • â…“ cup crumbled feta cheese

  • ¼ cup Kalamata olives, sliced

  • ¼ cup fresh dill or parsley, finely chopped

Creamy Mediterranean Dressing

  • ½ cup Greek yogurt

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp fresh lemon juice

  • 1 tsp Dijon mustard

  • 1 small garlic clove, minced

  • Salt & black pepper, to taste


Instructions

  1. Prepare peas: If using frozen peas, thaw and drain well.

  2. Mix salad: In a large bowl, combine peas, onion, cucumber, feta, olives, and herbs.

  3. Make dressing: Whisk Greek yogurt, olive oil, lemon juice, Dijon, garlic, salt, and pepper until smooth.

  4. Combine: Gently fold dressing into the pea mixture until evenly coated.

  5. Chill: Refrigerate for 20–30 minutes before serving for best flavor.


Serving Tips

  • Serve as a light side dish with grilled chicken or fish

  • Add chickpeas or white beans for extra protein

  • Sprinkle with toasted pine nuts or walnuts for crunch
