🫛 Mediterranean Classic Pea Salad
Ingredients

3 cups sweet peas (fresh or frozen, thawed)

½ cup red onion, finely diced

½ cup cucumber, diced

Creamy Mediterranean Dressing

½ cup Greek yogurt

2 tbsp extra-virgin olive oil

1 tbsp fresh lemon juice

1 tsp Dijon mustard

1 small garlic clove, minced

Salt & black pepper, to taste
Instructions

Prepare peas: If using frozen peas, thaw and drain well.

Mix salad: In a large bowl, combine peas, onion, cucumber, feta, olives, and herbs.

Make dressing: Whisk Greek yogurt, olive oil, lemon juice, Dijon, garlic, salt, and pepper until smooth.

Combine: Gently fold dressing into the pea mixture until evenly coated.
