Mediterranean Cloud Cake (Fluffy, Airy, Creamy)

🛒 Ingredients

A. Fluffy Cloud Sponge

  • 4 large eggs, separated

  • ¼ cup (60 ml) olive oil or melted butter

  • ½ cup (120 g) Greek yogurt

  • ½ cup (60 g) cornstarch or fine semolina (Mediterranean option)

  • ½ cup (100 g) sugar or ½ cup powdered erythritol (sugar-free)

  • 1 tsp vanilla

  • Zest of 1 lemon

  • 1 tsp baking powder

  • Pinch of salt


B. Cream Cloud Filling

  • 2 cups (500 g) Greek yogurt

  • 1 cup (240 ml) cold heavy cream

  • 3 tbsp honey or sugar-free sweetener to taste

  • 1 tsp vanilla

  • Zest of ½ lemon


C. Topping (Optional)

  • Greek yogurt whipped cream

  • Powdered erythritol or powdered sugar for dusting


🍰 Instructions

1. Make the Cloud Sponge

  1. Preheat oven to 325°F (160°C).

  2. Line a springform pan (8–9 inch) with parchment.

  3. In a bowl, whisk egg yolks + sugar until pale.

  4. Add olive oil (or butter), Greek yogurt, lemon zest, and vanilla; mix well.

  5. Add cornstarch (or semolina), baking powder, and salt → mix until smooth.

  6. In another bowl, whip egg whites until stiff peaks.

  7. Gently fold egg whites into the batter in 3 additions — be careful not to deflate.


2. Bake

  1. Pour batter into the prepared pan.

  2. Bake 45–55 minutes until golden and jiggly but set.

  3. Cool completely — the cake will settle softly and stay airy.


3. Make the Cream Cloud Filling

  1. In a bowl, whip heavy cream until soft peaks.

  2. Add Greek yogurt, honey/sweetener, lemon zest, and vanilla.

  3. Whip gently until thick and silky.

This creates the creamy layer you see in the photos — soft, mousse-like, cloud-light.


4. Assemble the Cloud Cake

  1. Slice the cooled sponge horizontally into 2 layers.

  2. Spread all the cream filling in the center.

  3. Add the top layer back.

  4. Dust with powdered sweetener or add yogurt cream on top.


Texture (Identical to the Photos)

  • Very soft sponge

  • Cotton-like fluff

  • Thick, creamy, smooth interior

  • Light, cool, cloud-like mouthfeel


🫒 Mediterranean Flavor Options

  • Add 1 tbsp extra virgin olive oil to the sponge for depth

  • Add 1–2 tbsp orange blossom water or rose water

  • Add lemon–honey glaze on top (optional)

  • Use sheep’s milk Greek yogurt for authenticity


🍬 Sugar-Free Version

Replace ALL sugar/honey with:

  • Erythritol or monk fruit in the sponge

  • Powdered monk fruit in the cream
    Absolutely no sugar needed — still sweet, airy, and decadent.
