🛒 Ingredients
A. Fluffy Cloud Sponge

¼ cup (60 ml) olive oil or melted butter

½ cup (100 g) sugar or ½ cup powdered erythritol (sugar-free)

1 tsp vanilla

Zest of 1 lemon

1 tsp baking powder

Pinch of salt
B. Cream Cloud Filling

2 cups (500 g) Greek yogurt
-
1 cup (240 ml) cold heavy cream
-
3 tbsp honey or sugar-free sweetener to taste

1 tsp vanilla
-
Zest of ½ lemon
C. Topping (Optional)

Greek yogurt whipped cream

Powdered erythritol or powdered sugar for dusting
🍰 Instructions
1. Make the Cloud Sponge

Preheat oven to 325°F (160°C).

Line a springform pan (8–9 inch) with parchment.

In a bowl, whisk egg yolks + sugar until pale.

Add olive oil (or butter), Greek yogurt, lemon zest, and vanilla; mix well.

Add cornstarch (or semolina), baking powder, and salt → mix until smooth.

In another bowl, whip egg whites until stiff peaks.

Gently fold egg whites into the batter in 3 additions — be careful not to deflate.
2. Bake

Pour batter into the prepared pan.

Bake 45–55 minutes until golden and jiggly but set.

Cool completely — the cake will settle softly and stay airy.
3. Make the Cream Cloud Filling

In a bowl, whip heavy cream until soft peaks.

Add Greek yogurt, honey/sweetener, lemon zest, and vanilla.

Whip gently until thick and silky.
This creates the creamy layer you see in the photos — soft, mousse-like, cloud-light.
4. Assemble the Cloud Cake

Slice the cooled sponge horizontally into 2 layers.

Spread all the cream filling in the center.

Add the top layer back.

Dust with powdered sweetener or add yogurt cream on top.
