☁️🍰 Mediterranean Cloud Cake (Light, Airy & Fluffy)

Ingredients

For the Cake Base (Fluffy Cloud Sponge)

  • 4 large eggs, separated

  • ½ cup honey or ½ cup sugar

  • ½ cup Greek yogurt (full-fat for best texture)

  • 2 tbsp olive oil (light flavored)

  • 1 tbsp lemon zest

  • 1 tsp vanilla extract

  • 1 cup fine semolina or all-purpose flour

  • 1 tsp baking powder

  • Pinch of salt

For the Fluffy Cream Topping

  • 1 cup Greek yogurt (cold)

  • 1 cup whipping cream (cold)

  • 2 tbsp honey or 2 tbsp powdered sugar

  • 1 tsp vanilla

Optional Mediterranean Garnishes

  • Fresh berries

  • Chopped pistachios or almonds

  • Light drizzle of honey

  • A sprinkle of crushed rose petals

  • Orange or lemon zest


🍳 Instructions

1. Prepare the Cake Batter

  1. Preheat oven to 325°F (160°C).

  2. Separate the egg whites and yolks.

  3. In a bowl, whisk egg yolks + honey + yogurt + olive oil + vanilla + lemon zest until creamy.

  4. Add semolina (or flour), baking powder, and mix gently.


2. Whip the Egg Whites (The “Cloud” Part)

  1. Add a pinch of salt to the egg whites.

  2. Beat with a mixer until stiff peaks form (4–5 minutes).

  3. Gently fold the whipped whites into the yolk mixture in 3 batches, keeping air inside.

This creates the super fluffy, cloud-like structure.


3. Bake

  1. Pour batter into a lined or greased round or square baking dish.

  2. Tap lightly to remove big air bubbles.

  3. Bake 35–40 minutes until lightly golden and springy.

  4. Let cool completely.


🧁 4. Make the Cloud Cream Topping

Whip together:

  • cold Greek yogurt

  • cold whipping cream

  • honey

  • vanilla

Whip until soft, fluffy clouds form.


5. Frost and Decorate

Spread the cloud cream over the cooled cake.
Top with any Mediterranean garnish:
✔ berries
✔ pistachios
✔ honey drizzle
✔ lemon zest
✔ rose petals


🍽️ Serve

Chill 1 hour for EXTRA cloud texture.
Serve cold or slightly chilled — melt-in-the-mouth perfection!


🌿 Variations

  • Orange Blossom Cloud Cake: add 1 tsp orange blossom water

  • Chocolate Cloud Cake: add 2 tbsp cocoa to batter + shaved chocolate on top

  • Ricotta Cloud Cake: replace yogurt in batter or topping with ricotta
