⭐ Ingredients
For the Cake Base (Fluffy Cloud Sponge)

4 large eggs, separated

½ cup honey or ½ cup sugar

½ cup Greek yogurt (full-fat for best texture)

2 tbsp olive oil (light flavored)

1 tbsp lemon zest
-
1 tsp vanilla extract

1 cup fine semolina or all-purpose flour

1 tsp baking powder

Pinch of salt
For the Fluffy Cream Topping

1 cup Greek yogurt (cold)

1 cup whipping cream (cold)

2 tbsp honey or 2 tbsp powdered sugar

1 tsp vanilla
Optional Mediterranean Garnishes

Chopped pistachios or almonds

Light drizzle of honey

A sprinkle of crushed rose petals

🍳 Instructions
1. Prepare the Cake Batter

Preheat oven to 325°F (160°C).

Separate the egg whites and yolks.

In a bowl, whisk egg yolks + honey + yogurt + olive oil + vanilla + lemon zest until creamy.

Add semolina (or flour), baking powder, and mix gently.
2. Whip the Egg Whites (The “Cloud” Part)

Add a pinch of salt to the egg whites.

Beat with a mixer until stiff peaks form (4–5 minutes).

Gently fold the whipped whites into the yolk mixture in 3 batches, keeping air inside.
This creates the super fluffy, cloud-like structure.
3. Bake

Pour batter into a lined or greased round or square baking dish.

Tap lightly to remove big air bubbles.

Bake 35–40 minutes until lightly golden and springy.

Let cool completely.
🧁 4. Make the Cloud Cream Topping
Whip together:

vanilla
Whip until soft, fluffy clouds form.
5. Frost and Decorate
Spread the cloud cream over the cooled cake.
