🍪 Mediterranean Brownie Mix Cookies
Fudgy like brownies, chewy like cookies, and super easy — just mix, scoop, and bake!
🟡 INGREDIENTS (makes 12–16 cookies)
Base

1 box brownie mix (any brand, 18–20 oz / 500–550g)

2 large eggs

⅓ cup olive oil (mild/light type)

1 tsp vanilla extract
Mediterranean Add-Ins (choose your favorites!)

¼ cup chopped walnuts
-
¼ cup pistachios
-
¼ cup dark chocolate chunks
-
2 tbsp tahini (adds Mediterranean richness – optional)
-
1 tsp espresso powder (optional, enhances chocolate)

Pinch of sea salt
Optional Flavors

½ tsp orange zest (Mediterranean citrus twist)

2 tbsp sesame seeds for topping

Drizzle of honey after baking
🟢 INSTRUCTIONS
1. Preheat Oven

Set to 175°C (350°F).

Line a baking tray with parchment paper.
2. Make the Cookie Dough
In a bowl combine:

Brownie mix
-
Eggs
-
Olive oil
-
Vanilla
-
Tahini (if using)
Mix until thick and sticky.
Add your nuts, chocolate chunks, or flavor add-ins.
3. Scoop & Shape

Scoop tablespoon-sized balls onto the tray.

Slightly flatten — they don’t spread much.

Sprinkle sesame seeds or sea salt on top if you like.
4. Bake
Bake 9–11 minutes until:

Edges are set

Centers look slightly soft (they firm up while cooling)
Do NOT overbake — fudgy cookies dry out quickly.
5. Cool
Let cool on the tray for 10 minutes before moving.
