Ingredients

  • 4 large eggs

  • 1 cup cottage cheese

  • 1 tbsp extra-virgin olive oil

  • 1½ cups fresh spinach, chopped

  • ¼ cup red onion, finely diced

  • 2 garlic cloves, minced

  • ¼ cup crumbled feta cheese

  • 2 tbsp grated Parmesan (optional, adds structure)

  • ½ tsp dried oregano

  • ¼ tsp dried thyme

  • ¼ tsp black pepper

  • ½ tsp salt (adjust to taste)

Instructions

  1. Preheat Oven
    Preheat to 180°C / 350°F. Lightly grease a pie dish or small baking dish.

  2. Blend the Base
    Blend eggs, cottage cheese, olive oil, oregano, thyme, salt, and pepper until smooth.

  3. Prepare Spinach
    Quickly sauté spinach and garlic in a dry pan just until wilted. Let cool slightly.
