🥒🦐 Creamy Cucumber Shrimp Salad (Mediterranean Style)

A refreshing, creamy, herb-packed shrimp salad perfect for lunch, dinner, or meal prep!


Ingredients

For the Salad

  • 400–500g cooked shrimp (peeled & deveined)

  • 2 large cucumbers (diced or sliced)

  • 1–2 tbsp fresh dill, finely chopped

  • 1 tbsp fresh parsley, chopped

  • 1 green onion, finely sliced (optional)

  • Salt & black pepper to taste

For the Creamy Mediterranean Dressing

  • ½ cup Greek yogurt

  • 2 tbsp mayonnaise (optional — you can use all yogurt for lighter)

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1–2 garlic cloves, minced

  • 1 tbsp olive oil

  • Salt & pepper to taste


🥗 Instructions

  1. Prepare the shrimp

    • If using raw shrimp, boil or sauté until pink (2–3 minutes). Let them cool completely.

    • If pre-cooked, simply thaw and pat dry.

  2. Prep the vegetables

    • Dice the cucumbers into medium pieces. Keep or remove the seeds as you prefer.

    • Add chopped dill, parsley, and green onion.

  3. Make the dressing

    • In a bowl, whisk together:
      Greek yogurt, olive oil, lemon juice, mayonnaise (optional), Dijon mustard, garlic, salt, and pepper.

  4. Combine everything

    • Add shrimp + cucumbers to a large bowl.

    • Pour the dressing over and toss gently until well coated.

  5. Chill & serve

    • Refrigerate 20–30 minutes for best flavor.

    • Serve cold.
