⭐ Ingredients
For the Salad

400–500g cooked shrimp (peeled & deveined)

2 large cucumbers (diced or sliced)

1–2 tbsp fresh dill, finely chopped

1 tbsp fresh parsley, chopped

1 green onion, finely sliced (optional)

Salt & black pepper to taste
For the Creamy Mediterranean Dressing

½ cup Greek yogurt

2 tbsp mayonnaise (optional — you can use all yogurt for lighter)

1 tbsp lemon juice

1 tsp Dijon mustard

1–2 garlic cloves, minced

1 tbsp olive oil

Salt & pepper to taste
🥗 Instructions

Prepare the shrimp

If using raw shrimp, boil or sauté until pink (2–3 minutes). Let them cool completely.

If pre-cooked, simply thaw and pat dry.

Prep the vegetables

Dice the cucumbers into medium pieces. Keep or remove the seeds as you prefer.

Add chopped dill, parsley, and green onion.

Make the dressing

In a bowl, whisk together:
Greek yogurt, olive oil, lemon juice, mayonnaise (optional), Dijon mustard, garlic, salt, and pepper.

Combine everything

Add shrimp + cucumbers to a large bowl.
