Creamy Mediterranean Sausage & Pasta Soup
Ingredients

2 tbsp extra-virgin olive oil

1 small onion, finely diced

2 cloves garlic, minced

2 carrots, sliced into rounds

2 celery stalks, diced

250–300 g chicken or turkey sausage, sliced or crumbled

1 tsp dried oregano
-
½ tsp dried thyme
-
½ tsp smoked paprika (optional)

Salt & black pepper, to taste

4 cups low-sodium chicken broth
-
1 cup short pasta (ditalini, small rings, or elbows)

¾ cup cooking cream or half-and-half
-
½ cup grated Parmesan cheese

1 tbsp lemon juice (Mediterranean touch 🍋)

2 tbsp fresh parsley or basil, chopped
Instructions

Sauté the base
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 5–6 minutes until softened. -
Add garlic & sausage
Stir in garlic and sausage. Cook until sausage is lightly browned. -
Season
Add oregano, thyme, paprika, salt, and pepper. Stir well to coat everything in flavor. -
Simmer
Pour in chicken broth. Bring to a gentle boil, then add pasta. Reduce heat and simmer 10–12 minutes, until pasta is tender. -
Make it creamy
Lower heat. Stir in cream and Parmesan cheese. Simmer gently 3–5 minutes until thick and velvety. -
Finish Mediterranean-style
Add lemon juice and fresh herbs. Taste and adjust seasoning.
