Creamy Mediterranean Sausage & Pasta Soup

Ingredients

  • 2 tbsp extra-virgin olive oil

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced into rounds

  • 2 celery stalks, diced

  • 250–300 g chicken or turkey sausage, sliced or crumbled

  • 1 tsp dried oregano

  • ½ tsp dried thyme

  • ½ tsp smoked paprika (optional)

  • Salt & black pepper, to taste

  • 4 cups low-sodium chicken broth

  • 1 cup short pasta (ditalini, small rings, or elbows)

  • ¾ cup cooking cream or half-and-half

  • ½ cup grated Parmesan cheese

  • 1 tbsp lemon juice (Mediterranean touch 🍋)

  • 2 tbsp fresh parsley or basil, chopped


Instructions

  1. Sauté the base
    Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 5–6 minutes until softened.

  2. Add garlic & sausage
    Stir in garlic and sausage. Cook until sausage is lightly browned.

  3. Season
    Add oregano, thyme, paprika, salt, and pepper. Stir well to coat everything in flavor.

  4. Simmer
    Pour in chicken broth. Bring to a gentle boil, then add pasta. Reduce heat and simmer 10–12 minutes, until pasta is tender.

  5. Make it creamy
    Lower heat. Stir in cream and Parmesan cheese. Simmer gently 3–5 minutes until thick and velvety.

  6. Finish Mediterranean-style
    Add lemon juice and fresh herbs. Taste and adjust seasoning.


Serving Suggestions

  • Serve hot with crusty whole-grain bread or focaccia

  • Drizzle with olive oil and extra Parmesan

  • Pair with a simple cucumber-tomato salad
