Crispy Baked Parmesan Zucchini Sticks

🧀 Mediterranean Crispy Baked Parmesan Zucchini Sticks

Ingredients:

For the zucchini:

  • 3 medium zucchinis

  • 2 tbsp olive oil

  • ½ cup grated Parmesan cheese

  • ½ cup breadcrumbs (preferably whole wheat or panko)

  • 1 tsp dried oregano

  • ½ tsp garlic powder

  • ½ tsp paprika (optional for color)

  • Salt and freshly ground black pepper, to taste

Optional garnish:

  • Fresh parsley or basil, chopped

  • Extra grated Parmesan

For dipping (Mediterranean-style):

  • ½ cup Greek yogurt

  • 1 tbsp lemon juice

  • 1 tsp olive oil

  • 1 small garlic clove, finely grated

  • Salt and pepper to taste


Instructions:

  1. Preheat oven:
    Set to 220°C (425°F). Line a baking sheet with parchment paper or lightly oil it.

  2. Prepare zucchini:

    • Wash and trim the ends.

    • Cut each zucchini in half, then slice into sticks (like thick fries).

    • Pat them dry with a towel to remove moisture.

  3. Make the coating mixture:
    In a shallow bowl, combine:
    Parmesan, breadcrumbs, oregano, garlic powder, paprika, salt, and pepper.

  4. Toss zucchini:

    • Drizzle zucchini sticks with olive oil and toss to coat.

    • Then roll each stick in the Parmesan-breadcrumb mixture until evenly coated.

    • Place them on the prepared baking sheet in a single layer.

  5. Bake:
    Bake for 18–22 minutes, flipping halfway, until golden and crispy.

  6. Make the yogurt dip:
    Mix Greek yogurt, lemon juice, olive oil, garlic, salt, and pepper in a small bowl.

  7. Serve:

    • Sprinkle baked zucchini sticks with fresh parsley and a little extra Parmesan.

    • Serve warm with the yogurt-garlic dip on the side.


🌿 Tips & Variations:

  • For extra crunch, use panko breadcrumbs.

  • Add a pinch of za’atar or dried thyme for a stronger Mediterranean aroma.

  • Great as a side for grilled chicken, fish, or falafel.
