🧀 Mediterranean Crispy Baked Parmesan Zucchini Sticks
Ingredients:
For the zucchini:

3 medium zucchinis

2 tbsp olive oil

½ cup grated Parmesan cheese

½ cup breadcrumbs (preferably whole wheat or panko)

1 tsp dried oregano
-
½ tsp garlic powder
-
½ tsp paprika (optional for color)

Salt and freshly ground black pepper, to taste
Optional garnish:

Fresh parsley or basil, chopped

Extra grated Parmesan
For dipping (Mediterranean-style):

½ cup Greek yogurt
-
1 tbsp lemon juice
-
1 tsp olive oil
-
1 small garlic clove, finely grated

Salt and pepper to taste
Instructions:

Preheat oven:
Set to 220°C (425°F). Line a baking sheet with parchment paper or lightly oil it. -
Prepare zucchini:

Wash and trim the ends.

Cut each zucchini in half, then slice into sticks (like thick fries).

Pat them dry with a towel to remove moisture.

Make the coating mixture:
In a shallow bowl, combine:
Parmesan, breadcrumbs, oregano, garlic powder, paprika, salt, and pepper. -
Toss zucchini:

Drizzle zucchini sticks with olive oil and toss to coat.

Then roll each stick in the Parmesan-breadcrumb mixture until evenly coated.

Place them on the prepared baking sheet in a single layer.

Bake:
Bake for 18–22 minutes, flipping halfway, until golden and crispy. -
Make the yogurt dip:
Mix Greek yogurt, lemon juice, olive oil, garlic, salt, and pepper in a small bowl. -
Serve:

Sprinkle baked zucchini sticks with fresh parsley and a little extra Parmesan.

Serve warm with the yogurt-garlic dip on the side.
