½ cup panko breadcrumbs (whole-wheat if possible)

½ tsp garlic powder

½ tsp onion powder

Salt & black pepper to taste
Light Mediterranean Bang Bang Sauce

½ cup plain Greek yogurt
-
2 tbsp olive oil mayonnaise (or extra yogurt)

1½ tbsp sweet chili sauce
-
1 tbsp honey or date syrup
-
1 tbsp fresh lemon juice
-
½–1 tsp chili flakes or sriracha (to taste)

🔪 Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Season the salmon
In a bowl, toss salmon cubes with olive oil, paprika, garlic powder, onion powder, salt, and pepper. -
Coat
Mix panko and Parmesan. Gently press salmon into the mixture until evenly coated. -
Bake
Arrange salmon bites in a single layer.
Bake 12–15 minutes, flipping once, until crispy and cooked through.
Optional: broil 1–2 minutes for extra crunch. -
Make the sauce
Whisk yogurt, mayo, sweet chili sauce, honey, lemon juice, and chili flakes until smooth. -
Serve
Drizzle sauce over salmon or serve on the side. Garnish with herbs and sesame seeds.
