Chicken & Marinade

600 g (1.3 lb) chicken tenders or sliced chicken breast

½ cup plain Greek yogurt

2 tbsp olive oil

Zest + juice of 1 lemon

3 cloves garlic, minced
-
1 tsp dried oregano
-
½ tsp paprika
-
½ tsp cumin
-
½ tsp salt
-
¼ tsp black pepper
Crispy Coating

¾ cup panko breadcrumbs
-
¼ cup grated Parmesan cheese
-
1 tsp dried oregano
-
½ tsp garlic powder
-
2 tbsp olive oil (for coating crumbs)
Optional Extras

Sesame seeds or crushed cornflakes for extra crunch

1️⃣ Marinate the Chicken

In a bowl, mix Greek yogurt, olive oil, lemon zest & juice, garlic, oregano, paprika, cumin, salt, and pepper.

Add chicken, coat well, and marinate 20–30 minutes (or up to overnight).
2️⃣ Prepare the Coating

In a shallow bowl, combine panko, Parmesan, oregano, garlic powder, and olive oil.

Mix until crumbs are lightly coated with oil.
3️⃣ Coat the Chicken

Remove chicken from marinade, letting excess drip off.

Press each piece into the breadcrumb mixture until well coated.
4️⃣ Cook (Choose One Method)
Oven-Baked (Healthier):

Preheat oven to 220°C / 425°F.

Place chicken on a lined baking sheet.

Bake 18–22 minutes, flipping once, until golden and cooked through.
Air Fryer:

Cook at 200°C / 390°F for 12–14 minutes, flipping halfway.
Pan-Fried:

Heat olive oil in a skillet over medium heat.

Cook 3–4 minutes per side until crispy and golden.
