🥔 Crispy Mediterranean Parmesan Garlic Potatoes
Perfect as a side dish for chicken, fish, or a full Mediterranean mezze table!
🛒 Ingredients

1 kg (2 lbs) baby potatoes or medium potatoes, halved

3 tbsp olive oil
-
3 tbsp grated Parmesan (or Pecorino)

3 tbsp breadcrumbs (optional but makes it extra crispy)

3 cloves garlic, minced
-
1 tsp paprika
-
1 tsp dried oregano
-
½ tsp dried thyme
-
Salt & black pepper to taste

Fresh parsley, chopped (for garnish)
🍽️ Instructions
1. Prep the potatoes

Wash and cut potatoes in half lengthwise.

Pat them dry so they crisp well.
2. Make the coating
In a bowl, mix together:

Olive oil
-
Parmesan
-
Breadcrumbs
-
Garlic
-
Paprika
-
Oregano
-
Thyme
-
Salt & pepper
3. Coat the potatoes

Toss the halved potatoes in the mixture until fully coated.

Lay them cut side down on a parchment-lined baking tray.
(This gives the beautiful golden crust like in the picture!)
4. Bake
Bake at 425°F (220°C) for 35–45 minutes until:

The bottoms are crispy and golden
-
The tops are tender
Don’t flip them — keeping them cut side down creates that crunchy crust.
5. Serve
Sprinkle with fresh parsley and extra Parmesan if you like.
Serve hot!
