🥦🔥 Crispy Roasted Mediterranean Cauliflower

Ingredients (4 servings)

For the Cauliflower

  • 1 large head cauliflower, cut into florets

  • 3 tbsp extra-virgin olive oil

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • ½ tsp ground cumin

  • ½ tsp dried oregano

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • Optional: ¼ tsp red chili flakes

Finish (Optional but amazing)

  • 1 tbsp lemon juice

  • Lemon zest (½ lemon)

  • 1–2 tbsp chopped fresh parsley

  • Optional: 1 tbsp tahini drizzle OR 1 tbsp grated parmesan/feta


👨‍🍳 Instructions

1. Prep

  1. Preheat oven to 425°F (220°C).

  2. Line a baking sheet with parchment for easier cleanup.


2. Season the Cauliflower

  1. Add cauliflower florets to a large bowl.

  2. Drizzle with olive oil.

  3. Sprinkle smoked paprika, garlic powder, cumin, oregano, salt, pepper, and chili flakes.

  4. Toss well to fully coat.


3. Roast

  1. Spread florets in a single layer — no overlapping.

  2. Roast 25–35 minutes, flipping halfway.

  3. Cook until the edges are deeply golden and crispy.


4. Add Mediterranean Finishing Touches

Once out of the oven, toss with:
✔ Fresh lemon juice
✔ Lemon zest
✔ Chopped parsley

Optional but delicious:
✨ Drizzle with tahini, or
✨ Scatter some feta or parmesan


🍽️ Serving Ideas

  • Serve with hummus or tzatziki

  • Add over couscous, quinoa, or a Greek salad

  • Use as a vegetarian “meaty” bowl topping

  • Pair with grilled chicken or fish for a full meal
