🥦🔥 Crispy Roasted Mediterranean Cauliflower

⭐ Ingredients (4 servings)
For the Cauliflower

1 large head cauliflower, cut into florets

3 tbsp extra-virgin olive oil

1 tsp smoked paprika

1 tsp garlic powder
-
½ tsp ground cumin
-
½ tsp dried oregano
-
½ tsp sea salt
-
¼ tsp black pepper
-
Optional: ¼ tsp red chili flakes
Finish (Optional but amazing)

1 tbsp lemon juice
-
Lemon zest (½ lemon)

1–2 tbsp chopped fresh parsley

Optional: 1 tbsp tahini drizzle OR 1 tbsp grated parmesan/feta
👨🍳 Instructions
1. Prep

Preheat oven to 425°F (220°C).

Line a baking sheet with parchment for easier cleanup.
2. Season the Cauliflower

Add cauliflower florets to a large bowl.

Drizzle with olive oil.

Sprinkle smoked paprika, garlic powder, cumin, oregano, salt, pepper, and chili flakes.

Toss well to fully coat.
3. Roast

Spread florets in a single layer — no overlapping.

Roast 25–35 minutes, flipping halfway.

Cook until the edges are deeply golden and crispy.
4. Add Mediterranean Finishing Touches
Once out of the oven, toss with:
✔ Fresh lemon juice
✔ Lemon zest
✔ Chopped parsley
Optional but delicious:
✨ Drizzle with tahini, or
✨ Scatter some feta or parmesan
