1️⃣ Prep the Vegetables
Wash and chop all vegetables into bite-sized pieces.
2️⃣ Layer in the Crockpot
Add cabbage, onion, carrots, celery, potatoes (if using), and garlic to the slow cooker.
3️⃣ Season & Add Liquid
Drizzle olive oil over the vegetables. Add diced tomatoes, broth, salt, pepper, oregano, thyme, paprika, and bay leaf. Stir gently.
4️⃣ Slow Cook
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until vegetables are tender.

Remove bay leaf. Taste and adjust seasoning. Add lemon juice or greens if desired and cook 10 more minutes.
