⭐ Ingredients (4 servings)

For the zucchini sticks

  • 3 medium zucchinis

  • 1 large egg (or 2 tbsp olive oil for egg-free option)

  • ½ cup grated Parmesan cheese

  • ½ cup whole-grain breadcrumbs OR almond flour (Mediterranean low-carb option)

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • ½ tsp paprika

  • Salt & black pepper to taste

  • Olive oil spray or 1 tbsp olive oil

Optional Mediterranean dips

  • Tzatziki

  • Garlic yogurt dip

  • Marinara with basil


🍽️ Instructions

1️⃣ Prep the zucchini

  1. Preheat oven to 220°C (425°F).

  2. Cut each zucchini into sticks/fingers (like fries).

  3. Pat them dry with paper towels — this helps them get crispy.

2️⃣ Prepare the coating

In a shallow bowl, mix:

  • Parmesan

  • Breadcrumbs/almond flour

  • Garlic powder

  • Oregano

  • Paprika

  • Salt & pepper

In another bowl, whisk the egg.

3️⃣ Coat the zucchini

  1. Dip each stick in the egg (or brush with a bit of olive oil).

  2. Press into the Parmesan coating, making sure all sides are covered.

4️⃣ Bake

  1. Arrange sticks on a baking sheet lined with parchment.

  2. Lightly drizzle or spray with olive oil.

  3. Bake 18–22 minutes, flipping halfway, until golden and crispy.

5️⃣ Serve

Enjoy hot with tzatziki, yogurt-garlic dip, or spicy marinara.
