🥕 Easy Homemade Carrot Bread
Ingredients:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg
-
½ cup brown sugar (packed)

¼ cup white sugar
-
2 large eggs
-
½ cup vegetable oil (or melted butter)

1 tsp vanilla extract
-
1 ½ cups grated carrots (about 2 medium carrots)

½ cup chopped walnuts or pecans (optional)

½ cup raisins (optional)
Instructions:

Preheat Oven → Set to 175°C (350°F). Grease and flour a 9×5 inch loaf pan.

Mix Dry Ingredients → In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Mix Wet Ingredients → In another bowl, beat eggs with brown sugar and white sugar until smooth. Add oil and vanilla.

Combine → Stir in grated carrots. Gradually fold in the dry mixture until just combined. (Don’t overmix.)

Optional Add-ins → Fold in walnuts and/or raisins.

Bake → Pour batter into the prepared loaf pan. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.

Cool & Serve → Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy warm or at room temperature.
