🥕 Easy Homemade Carrot Bread

Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ½ cup brown sugar (packed)

  • ¼ cup white sugar

  • 2 large eggs

  • ½ cup vegetable oil (or melted butter)

  • 1 tsp vanilla extract

  • 1 ½ cups grated carrots (about 2 medium carrots)

  • ½ cup chopped walnuts or pecans (optional)

  • ½ cup raisins (optional)


Instructions:

  1. Preheat Oven → Set to 175°C (350°F). Grease and flour a 9×5 inch loaf pan.

  2. Mix Dry Ingredients → In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. Mix Wet Ingredients → In another bowl, beat eggs with brown sugar and white sugar until smooth. Add oil and vanilla.

  4. Combine → Stir in grated carrots. Gradually fold in the dry mixture until just combined. (Don’t overmix.)

  5. Optional Add-ins → Fold in walnuts and/or raisins.

  6. Bake → Pour batter into the prepared loaf pan. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool & Serve → Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy warm or at room temperature.


🍯 Tips & Variations:

  • Add 1 tbsp orange zest for a citrusy touch.

  • Replace half of the flour with whole wheat flour for a healthier version.

  • Spread with cream cheese or honey for extra flavor.
