For the Cake

1 box lemon cake mix (or vanilla if you prefer less lemon)

1 cup 7UP (not diet)

3 large eggs

⅓ cup extra-virgin olive oil (Mediterranean twist—makes it moist & fragrant)

1 tbsp lemon zest

1 tsp vanilla (optional)
For the Lemon Glaze

1 cup powdered sugar

2–3 tbsp fresh lemon juice

1 tsp lemon zest
-
Optional: 1–2 tsp 7UP for extra shine

1. Prepare the Cake

Preheat oven to 350°F (175°C).

Grease a bundt pan or 9×13 baking dish.

In a bowl, mix together:

7UP

Whisk until smooth (do NOT overmix).

Pour batter into your prepared pan.
2. Bake

Bake 40–45 minutes (bundt) or 28–32 minutes (9×13).

3. Make the Glaze
Whisk together powdered sugar, lemon juice, zest, and optional 7UP until silky.
