🐟 Easy Mediterranean Baked Fish
A light, flavorful, and quick dish baked with olive oil, herbs, garlic, lemon, and fresh vegetables. Ready in 20 minutes!
⭐ Ingredients (Serves 2–3)
Fish

2–3 fish fillets (cod, tilapia, haddock, snapper, or any white fish)

2 tbsp olive oil
-
2 tbsp lemon juice
-
1 tsp lemon zest
-
3 cloves garlic, minced
-
1 tsp oregano
-
½ tsp paprika
-
Salt & pepper to taste
Vegetable Topping (Mediterranean Style)

1 cup cherry tomatoes, halved
-
½ cup red onion, thinly sliced
-
¼ cup kalamata olives, sliced
-
¼ cup fresh parsley, chopped
-
2 tbsp capers (optional)
-
2 tbsp olive oil
🔧 Instructions
1. Preheat Oven

Preheat to 200°C (400°F).

Lightly grease a baking dish with olive oil.
2. Season the Fish
In a bowl, mix together:
✔ olive oil
✔ lemon juice + zest
✔ garlic
✔ oregano
✔ paprika
✔ salt & pepper
Brush or rub this mixture all over the fish fillets.
3. Add Mediterranean Topping
In another bowl, toss together:
✔ cherry tomatoes
✔ onion
✔ olives
✔ capers
✔ parsley
✔ olive oil
✔ pinch of salt & pepper
Spread this mixture evenly around and on top of the fish.
4. Bake

Bake for 15–18 minutes, depending on thickness.

Fish should flake easily with a fork.
