🐟 Easy Mediterranean Baked Fish 

A light, flavorful, and quick dish baked with olive oil, herbs, garlic, lemon, and fresh vegetables. Ready in 20 minutes!


Ingredients (Serves 2–3)

Fish

  • 2–3 fish fillets (cod, tilapia, haddock, snapper, or any white fish)

  • 2 tbsp olive oil

  • 2 tbsp lemon juice

  • 1 tsp lemon zest

  • 3 cloves garlic, minced

  • 1 tsp oregano

  • ½ tsp paprika

  • Salt & pepper to taste


Vegetable Topping (Mediterranean Style)

  • 1 cup cherry tomatoes, halved

  • ½ cup red onion, thinly sliced

  • ¼ cup kalamata olives, sliced

  • ¼ cup fresh parsley, chopped

  • 2 tbsp capers (optional)

  • 2 tbsp olive oil


🔧 Instructions

1. Preheat Oven

  • Preheat to 200°C (400°F).

  • Lightly grease a baking dish with olive oil.


2. Season the Fish

In a bowl, mix together:
✔ olive oil
✔ lemon juice + zest
✔ garlic
✔ oregano
✔ paprika
✔ salt & pepper

Brush or rub this mixture all over the fish fillets.


3. Add Mediterranean Topping

In another bowl, toss together:
✔ cherry tomatoes
✔ onion
✔ olives
✔ capers
✔ parsley
✔ olive oil
✔ pinch of salt & pepper

Spread this mixture evenly around and on top of the fish.


4. Bake

  • Bake for 15–18 minutes, depending on thickness.

  • Fish should flake easily with a fork.


🍽️ Serve With

  • Lemon rice or herbed quinoa

  • Greek salad

  • Roasted vegetables

  • Warm whole wheat pita


⭐ Optional Boosts

  • Add sliced zucchini or bell peppers to the pan.

  • Add feta cheese on top before baking.

  • Substitute fish with salmon—increase baking time to 20–22 minutes.
