🥧 Easy Mini Chicken Pot Pies (Mediterranean Style)

📝 Ingredients (Makes 10–12 mini pies)

For the Filling

  • 2 cups cooked chicken breast, shredded or diced

  • 2 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1 cup mushrooms, diced (optional but very Mediterranean)

  • 1 cup carrots, finely diced

  • 1 cup zucchini, finely diced

  • 1 cup baby spinach, chopped

  • 1 cup peas

  • 1.5 tbsp flour (or whole-wheat flour)

  • 1 cup low-sodium chicken broth

  • ½ cup milk (or evaporated milk OR Greek yogurt for extra protein)

  • Salt and pepper to taste

Mediterranean Herbs & Seasoning

  • ½ tsp dried oregano

  • ½ tsp dried thyme

  • ½ tsp paprika

  • ¼ tsp black pepper

  • Optional: pinch of chili flakes

  • Optional: 1 tbsp chopped fresh parsley

For the Crust

  • 1 sheet puff pastry or pie dough
    (You can also use phyllo sheets for a lighter Greek-style version)

  • 1 egg, beaten (for brushing)

For Mini Pie Assembly

  • Non-stick muffin tray

  • Olive oil spray


👩‍🍳 Instructions


1. Prepare the Filling

  1. Heat olive oil in a skillet.

  2. Add onion, garlic, mushrooms, carrots, and zucchini.

  3. Cook 4–5 minutes until vegetables soften.

  4. Add shredded chicken and peas.

  5. Sprinkle flour over the mixture and stir for 1 minute.

  6. Pour in chicken broth and milk (or Greek yogurt).

  7. Add oregano, thyme, paprika, and pepper.

  8. Simmer 2–3 minutes until slightly thickened.

  9. Stir in spinach and turn off heat.

  10. Let the filling cool slightly.


2. Prepare the Crust

  1. Preheat oven to 200°C (400°F).

  2. Roll out puff pastry or pie dough.

  3. Cut into circles slightly larger than the muffin tin cups.


3. Assemble Mini Pot Pies

  1. Lightly oil the muffin tin.

  2. Press pastry circles into each cup.

  3. Spoon chicken filling inside.

  4. Cut smaller pastry circles for the lids and place on top.

  5. Seal edges by pressing with a fork.

  6. Brush tops with beaten egg.

  7. Make a small slit on top for steam to escape.


4. Bake

  • Bake for 18–22 minutes, or until golden brown and crispy.
